Qavalli launches Nizam-inspired culinary festival in Delhi

Qavalli has launched Nazm-e-Nizam: The Royal Table of the Nizams, a limited-period culinary festival celebrating the food traditions of Hyderabad’s Nizams. The festival will run from June 15 to July 30, 2026, at the restaurant in New Delhi.

The festival explores the culinary influences that shaped the royal kitchens of the Asaf Jahi dynasty, bringing together dishes inspired by Hyderabad, Andhra Pradesh, Bengal, Persia and colonial India.

The special menu features appetisers such as Hyderabadi Lukhmi, Shikampuri Kebab, Talawa Gosht, Apollo Prawns, Chenna Matar Pasanda and Guntur Chilli Paneer. Main course offerings include Bagara Baingan, Mirchi aur Paneer Ka Salan, Daalcha Gosht, Andhra Mutton Pepper Fry, Dak Bungalow Chicken Curry and Chingri Malai Curry.

Biryani remains a key highlight of the festival, with guests able to choose between Hyderabadi Chicken Biryani prepared in the traditional kacchi style and Kolkata Mutton Biryani. The dessert selection includes Khubani Ka Meetha, Bhapa Doi, Gil-e-Firdous and Poda Rossogolla.

Speaking about the festival, Chef Aman Dhar said: “The story of Hyderabad’s cuisine is one of cultural exchange, refinement, and remarkable culinary evolution. The kitchens of the Nizams brought together influences from Persia, the Deccan, Bengal, and beyond, creating dishes that continue to define India’s gastronomic heritage. With Nazm-e-Nizam, our aim was to honour these traditions while presenting them in a way that resonates with today’s diners. Every dish on this menu carries generations of history, craftsmanship, and emotion, and we are delighted to bring these timeless flavours to our guests at Qavalli.”

The festival is available for a limited period and highlights the culinary heritage associated with the Nizams of Hyderabad.
